A quick recipe before the Christmas cake …
Chocolate chip cookies, one of the family’s favourites.
Not an all in one recipe this time! Didn’t remember to take the butter out of the fridge 30 minutes before starting, so had to put it in the microwave for 20 seconds to soften it. This recipe has two types of sugar in it, the usual caster sugar and some light muscovado sugar. The muscovado, I believe, makes the cookies spread out when you cook them. After beating 100g butter and 75g caster sugar together I added 1/2 tsp vanilla extract and a beaten egg – a little at a time so not to make the mixture curdle. Stirred in 150g self raising flour and then last of all stirred in the plain chocolate chips, 100g of them. The bag was 100g so none left over for me to pick at!!
Large teaspoons of the mixture were spooned onto the baking trays (which had been lightly greased) and popped into the oven (170°C) for 8-10 minutes. Mary said to watch these carefully as they burn very quickly, so after 8 minutes I was watching them like a hawk.
Onto a cooling rack and that was it.
