Oat Rounds today – did think about making flapjacks, but didn’t have enough butter, so a quick look through the book came up with this recipe.
First up lightly grease two baking trays – easy used my ‘cake release’.
Next, cream 100g softened butter and 50g sugar together (not an all in one mix this time!). There wasn’t very much to cream, so it was quite fiddly with the hand whisk, but we got there in the end. Stirred in 100g oats and50g flour and used my hands to bring the mixture together. Kneaded the mixture until smooth and then rolled it out on a floured work surface. Floured work surface – flour everywhere then in my case!!
Using a 6cm cutter I had enough mixture to do exactly 16 biscuits as Mary says! For the last biscuit it was a case of putting the dough into the cutter and pushing it down to make the circle!
In the oven (140°C) for 20 minutes until golden brown.
We didn’t actually get to eat these biscuits with cheese as Mary suggests, as they were so nice on their own with a cup of tea! Another recipe I will be making again!!
